Another fish that played a big part in the history of “Blue Ocean Seafood” or “Alloo”, is the sprat. Throughout the years the smoked sprat has proven its value to the company and continues to do so today. Using beautiful and large sprats, we can make a difference.
Prior to World War II, “Alloo” was one of many sprat and herring smokehouses. As a result of the World War, smokehouses disappeared and sprat became rare which caused it to lose its popularity.
Biology (Sprattus sprattus)
Sprat is similar to herring. It's a small, pelagic fish that grows to approximately 10cm in size. Sprat usually live in big schools. Preceding the 1940s our oceans were filled with sprat, nowadays the biggest supply comes from Sweden.
Smoking
Sprat is cold smoked. We try to achieve a subtle combination of both saltiness and smoke taste. We select our sprat very carefully so that we can offer tasteful, big and meaty sprat. The process of smoking sprat is a labour-intensive one: every fish is manually picked and hung on the chariots.
